Been really enjoying your build I have been around boats and since was a kid. Fishing family for literal eons.
May i suggest 2 /50 gal tanks placed amidships…..
-this would help negate water slosh noise under bunk
-water won’t hammer so hard inside your plumbing- reduce fore-aft slosh from traversing open ocean
swells
-keep weight constant in bow for sailing
-if placed lace low amidships can be pumped out for flotation hull if holed
-can carry more chain
-if 2 tanks the contamination is halved
-can use one tank over other to trim list on long leg
